Making Fajitas

Chicken Fajitas (thank you Jamie Oliver)

Ingredients

1 red pepper

1 medium red onion

2 skinless chicken breasts or thighs

1 teaspoon smoked paprika

1 small pinch of ground cumin

2 limes

olive oil

What to do

Slice the pepper into thin strips

Slice the onion.

Slice the chicken lengthways into long strips, roughly the same size as the pepper strips.

Put the peppers, onion, and chicken into a bowl with the paprika and cumin.

Squeeze over the juice of half a lime, drizzle over 1 tablespoon of oil,

Season with a good pinch of black pepper and mix well. Put aside to marinate for 5 minutes.

While the chicken is marinating get your other items together to serve with the fajitas

Small flour tortillas

Natural yoghurt or sour cream

Grated cheddar cheese

Guacomole (See Activity 51: A.P.P.L.E's Guacamole with a twist)

Salsa

Back to the fajitas

Put a griddle pan/ frying pan/wok on a high heat.

When the pan is hot add your chicken mix in and cook for 6-8 mins keep turning the pieces of chicken and vegetables over so they don’t burn.

Squeeze over some lime juice.

Warm the tortillas

Serve and EAT
